After a day of homework and exercise by the lake, I was looking forward to eating something yummy. Although I had a nice wrap with lots of vegetables and a sweet potato, it wasn't enough. Hence, strawberry banana oat flaxseed bread-- a twist on the Blueberry Banana Oat Flax Bread I made a couple of weeks ago. I deviated a little from the recipe this time around-- because I ran out of my regular 1% milk today, I used soy. I also added an egg. And since I bought whole wheat flour at the store two weeks ago, I decided to try it out for this recipe:
Dry Ingredients:
2 cups whole wheat flour
pinches of salt, baking soda, and baking powder
1 cup oats
3 tb ground flaxseed
Wet Ingredients:
2 bananas, cut into pieces
1 cup of soy milk (honestly, I can't remember how much I put in)
dash of vanilla extract and lemon
drizzles of honey (just used the rest of the bottle)
strawberries, cut into pieces
First, mix all dry ingredients. Set aside.
Put all wet ingredients except for strawberries into a blender. Mix.
Fold dry ingredients into wet ingredients. Mix really well.
Toss in strawberries. Mix some more!
Bake!
