Coconut Pineapple Ice Cream!
I went to the market with a hankering to make coconut ice cream, so bought milk, cream, and unsweetened coconut flakes. A lot of recipes online call for coconut milk, but I didn't have any, and besides, I think it may be more fattening (wonder if you could add coconut water?). At home, I suddenly realized that I had a pineapple to add to the mix!
Here are the ingredients for this deliciousness:
Milk
Heavy Cream (half the amount of milk used)
Vanilla
Coconut Extract
1/4 cup of honey (melted)
Pineapple juice (squeezed from pineapple)
Mix these together and toss into ice cream maker. Start churning.
Meanwhile, toast coconut flakes in a pan. Put in freezer to cool.
Toward the end of the churning process, toss in coconut flakes and small pineapple chunks.
Deliciousness! Trust me, it is super tasty! Besides the sugar content in the ingredients, no other sugar was added. What a great bonus!
